The best recipes, but make sure you get the latest publication of the book
America's Test Kitchen has the most reliable, error proof, tasty recipes. I highly recommend this book BUT MAKE SURE YOU GET THE LATEST PUBLICATION which (as of the time that I'm writing this review) I think now includes 17 seasons worth of recipes instead of 10. I ordered this book several years ago, and I would purchase the new volume if I didn't already have access to all 17 seasons via my subscription to the website.As a side note, I basically learned to cook from watching this show. My mom gets so mad that I cook more with their recipes than with hers. I recommend subscribing to their website so that you can have access to their recipe videos. Aside from recipes they also offer great product reviews for cookware, knives, gadgets, kitchen appliances, etc. They'll tell you which ones work the best at the most affordable price. Affordable meaning that, in contrast to most cooking magazines which get paid to promote the priciest products, they only recommend products that the average consumer can afford. For example, they will tell you why the $50 dollar toaster they recommend works better than the $200 toaster with all the bells and whistles that nobody needs on a toaster and that don't help it toast bread any better anyway. But they'll also explain that you should avoid the temptation to buy such and such brand $20 toaster because it only toasts one side of the bread. I don't think I've ever been disappointed with one of their recommended products that I have purchased. They also do taste tests and determine the best brands of prepared food products. So you don't have to try 5 different brands of hummus, or brownies, or broth, or curry powder to find a good one.I highly recommend all of their cookbooks and website subscriptions.

A MUST have for any cook!
When I first purchased this book I had absolutely no clue what I was doing in the kitchen! This book is a must have for any kitchen! I have made about 30 recipes from this book and all of them have turned out perfectly. The recipes can at times be labor intense but the end results is well worth the effort. My family now loves coming over for holidays because they know the food will be great!Another feature I love about this book are the side pictures. The pictures are extremely helpful because they walk you through difficult tasks like butterflying a steak/pork chop, forming a lattice pattern for pies, carving a turkey, etc! The book is also amazing because the authors actually tell you WHY you are doing something a certain way or why you should not substitute another ingredient.I also really enjoy the section of the book where the chefs list their "favorites" of each cooking ingredient/item. I have used this a number of times when looking to buy new gadgets like potato ricers, knives, and even melting chocolates. You doing have to spend hours reading online reviews, because you can trust the guide at the end of the book.The book has recipes for just about everything-Mexican dishes, Italian, cakes, cookies, grilling favorites. you name it and they most likely have a recipe for it. This book is my first stop for new recipes!

Recipes turn out perfect every time! Great book!
I have to admit, that I'm a bit of a nerd when it comes to my cookbooks. My boyfriend makes fun of me because I love to watch ATK and follow right along with them with my cookbook on my lap. I have many cookbooks, however, it his the the one that gets the most use in my kitchen. This book is fantastic! I ordered it from ATK when I received a postcard in the mail. I lent it to my father for Thanksgiving so he could roast his turkey perfectly. It took a while to get the cookbook back from him as he fell in love with the book! This book contains every recipe done on the ATK TV show from beginning to 2012. The recipes always come out perfectly. You may use every pot and pan and cooking utensil that you own to make one of these recipes, however, you will always get a perfect product when you are through. I ordered this book from Amazon for my father for Christmas. I had to give it to him early as he was cooking Christmas dinner and he asked to use my cookbook again! He used it to make prime rib, green beans almondine and sangria. He also only got 3 hours of sleep that night because he stayed up reading it. It's an interesting read as the book also contains all of the equipment ratings and taste tests done on the television show.

America's Test Kitchen did it again!
I'm a big fan of Cook's Illustrated, who also does the America's Test Kitchen series. I love being able to rely on their recipes, save myself the disappointment of bad recipes because they did the testing for me, and learn about how they developed the recipe. Very rarely, I didn't care for the results, but that was either because I didn't execute the recipe right, or it was a matter of taste. I have yet to find a recipe that they did not optimize, they're that good.This cookbook combines almost all of their recipes from the last 10 years of their show America's Test Kitchen. Although there are a few recipes missing, this is not an issue for me at least, as this cookbook will keep me plenty busy (I know I'll make more recipes out of this book than most regular cookbooks) and I have a couple of other Cook's Illustrated cookbooks that I love and can fill any gap for me.I also like the finish of this book, which has small color pictures for most recipes and a lot of full-size pictures, something Cook's Illustrated normally doesn't do. I find it helps me want to cook more and better too.Bottom-line, I highly recommend this cookbook. If I had a daughter that was going off to live on her own, I would get her this cookbook and Cook's Illustrated's 'New Best Recipe' cookbook as a very comprehensive starter collection - I wish someone had done that for me, then I could have saved myself from a lot of less useful cookbooks out there.

Seller is professional. The book meets my expectation. Since the book is bulky and rather expensive might be a good idea to require a signature by the buyer.

Cooking bible!
This is an excellent compendium of recipes from the TV show that has been running in the US for 12 years now. If you have cable/sky you may have PBS which shows this programme. I stumbled upon this show one weekend and was very impressed by their philosophy and ethos. They are not about fancy ingredients or exotic cooking. They are about good home cooking and testing cooking techniques and cooking equipment. The chemistry of cooking is explained and I've picked up lots of useful tips and tricks: brining meat, rinsing potatoes halfway through cooking for fluffier mash, etc. Bearing in mind this is an american book there a number of things that still make it applicable to the UK market. First, is the inclusion of conversions. You may notice one of the criticisms of american books on this site, is the use of cup measures. This is hardly an arduous task but can cause variations in the weight of ingredients, so I was pleased to see weight equivalents. Second, the recipes are extensively tested and while some of the techniques and/or ingredients may seem odd, the results are highly reliable. The book covers everything from soup and salad to takeaway favourites to baking and desserts. Finally, I've noticed that some of the US reviews have criticised the book for not including all the recipes from the show. I had to admit that I've found all the recipes that appealed to me in the book. A quick search on the internet will usually deliver any missing recipes. This book is all about home cooking with easy-to-find ingredients, so if you are after gourmet or ethnic cooking, this is not the book for you. This book is aimed at Americans living in America, so the product and equipment reviews will mean nothing to UK consumers. Given this isn't the main purpose of the book, I really don't mind. I've not yet come across any ingredient that is hard to find however, you may need to make some educated guesses for the recommended cuts of meat, cheese types etc. Also I have to warn you that the servings are quite generous!! I've mainly tried the baking recipes with great success and praise; the strawberry cream cake and lemon bundt cake got rave reviews. A highly reliable recipe reference book for "good ol' fashioned home cooking" with a US flavour.UPDATE:I've had this book for several months now and since writing my review, I've delved into the other chapters. I have to say that I now almost cook exclusively from this book and other titles by the Editors. Some of the recipes are the best I've ever tasted; the book is worth it for the Ultimate beef chilli alone! Yes, you will have to hunt out a few ingredients that are not readily available in this country, but substitutions are readily given. Other highlights are: pan-seared chicken breast with lemon and chive pan sauce, glazed salmon, nut crusted chicken cutlets with lemon and thyme, cuban style black beans and rice, salt-baked potatoes with roasted garlic butter ( the BEST baked potatoes for 5 minutes work!). Already I have a long list of recipes that I want to try: restaurant-style pan seared steaks with herb sauce and potato galette are on the menu this weekend. While some of the recipes do take time, much of it is hands off - oven, chilling or marinating time. None of the recipes are complex in terms of skill and the tips and advice are highly useful for the novice and experienced cook alike. There are also plenty of weeknight/time starved recipes - chicken fricassee, spaghetti with pecorino and black pepper ( this took 15min from start to eating) to name a few. I have yet to have a recipe fail and I think these recipes are so reliable that I would try them out for a dinner party without rehearsal. I've bought many other books by these guys and I'm getting more and more impressed! This is great book and great book for anyone who wants to cook (whether or not they can!)

Absolutely love it!
If you're a fan of the series this cookbook is a must in your kitchen. I tried a dozen or so recipes already and they turned out fantastic, super delicious and all were family friendly. The recipes are easy to follow, well written and the results do not disappoint. I l like that most recipes use easy to find ingredients, and for the most part, they use ingredients you already buy or have in your pantry.The book is absolutely HUGE and guaranteed there is plenty of recipes to choose from for every palate. I know this book will be well used in my kitchen for a very long time to come. The variety is just endless.They also include a ton of reference material for ingredients, brands and tools they use on the show. The conversion charts are very detailed and helpful as well.

American cooking
Cookbook that concentrates on techniques rather than celebrity. The recipes are multi stage, so may look complicated, but often involve procedures which mean the food is left to marinate for a number of hours, or cooked at 2 different temperatures. allow for the fact that the American taste is often sweeter than Uk, so sugar quantities can be reduced to taste. A good buy, regenerating my cooking!
