Heavy duty but much lighter than cast iron.
Awesome pans. They were heavier than I expected but still significantly lighter than the equivalent cast iron pans.Seem to be seasoning well so far though I have only been cooking in them for a month now.Sear as well as cast iron.

fantastic experience with this pan...
I'm not sure why others have had a poor experience with this pan, but mine was fantastic. Not only did I cook over medium eggs first (against instructions), but they came out perfect and slid right out of the pan. I figure I'll share what I did, so maybe others will have similar success.First, I have never owned a cast iron or carbon steel pan before and have zero familiarity with them, so after getting frustrated trying to cook eggs in my stainless steel pans, and fearing teflon, I took a risk and bought the Made in 9 inch pre-seasoned carbon steel pan. Then, while I waited for delivery, I went on Reddit.From the reading I did, I decided to go with an alternative seasoning method from the one the Made In site suggests. Also, even though the pan is pre-seasoned, I read that it should be seasoned again manually before cooking with it, so this is what i did:1. heated up the pan on high2. applied grape seed oil to a paper towel and rubbed it on the surface of the pan3. let it sit till it looked kind of dry again4. repeated this like 4 more times over less than 10 min5. used a rag to wipe off the paper towel lintThen I added like 1/2 Tbs of butter and cracked two eggs. That was it! Total breakfast game changer :)

Easy to clean with light soap and scrub brush
Had a little trouble at first with egg sticking but realized after reading and watching Youtube videos that once the egg is sufficiently heated (or other foods such as meat) it will release from the pan and the pan will retain fairly good non-stick properties. I have used this pan almost daily since purchase to test various foods for sticking and searing and the performance is what I was expecting and hoping for. I have looked at other reviews of this pan and observed pan thickness variations related to uneven heating. So far not my experience.

Carbon steel first timer
I think I will love this pan, once it's well-seasoned. There is a learning curve and patience is a must! It's beautiful, very sturdy. Will outlive me.

I absolutely love cooking with it, BUT…
The pan heats up quickly and is great for searing foods. Works very well with glass top stoves. However, the pan bowed upward in the middle, so all fats, eggs, whatever, drifts to the edges. A pan this expensive should never do this.I bought this in March 2023 while moving to a new city, renting a short term apartment and in need of cookware at 2 locations. I was super excited to order this pan.. I ordered the 10” right away, and a full set later as a wedding gift. This pan arrived bowed… I’d have returned it, but I was too preoccupied with my move, etc.I found a less expensive brand on X via CaryKelly, and I’m planning to give that a try.

Good set of pans.
These are good quality pans. However I wasn’t impressed with the seasoning. I can’t knock them for it as they’d be ridiculously expensive if they took to the time to put a very high quality seasoning on them. I’ve never had a factory carbon pan or cast iron that was up to my liking though. The only issue I see might be the heat conduction of the handle, It’s very thin so it will conduct heat from the pan quickly. Probably will pick up a set it silicone covers for a them.

A work in progress?
These are my preliminary thoughts on the frying pans: I bought them a month ago and although I haven't used them frequently, I have a sense of how they perform. I'm not entirely satisfied so far. I followed the procedure for seasoning them yet when I use them, food still sticks to them. I was expecting non-stick quality. In fact, I seasoned them twice. I also cleaned them as directed. I actually thought of returning them but missed the 30 deadline by two days. Nevertheless, I will further evaluate them over time to see if things turn around.
