A healthy and low-calorie source of fiber
I ordered this product with the intent of using it as a base crust for a healthy and high-protein cheesecake. It did not disappoint. The consistency is a bit grainier than a graham cracker crust, but for a total of only 15 calories for an entire crust, it’s unbeatable (pictured are minis, so the calories are around 2 cals for the crust for each mini)Overall, you can definitely use this as a source of fiber by throwing it in shakes, or even baking it to make a mock graham cracker/crust. It’s a good, and cheap product that will last a while.Recipe for crust/Graham crackers:-25g Oat Fiber-30g Erythritol-15g sugar free syrup-1/2 tsp Cinnamon-Pinch of salt-30g waterAdd all the dry ingredients, then syrup, and slowly add water in increments of 10g and mix between increments. The end product should be a cookie dough-like consistency.Bake at 300 F (150 C) for around 50 minutes.

Great oat fiber
I've repurchased this brand of oat fiber many times on Amazon and elsewhere. There are other brands that smell better but they are more expensive. I've found that they all taste the same.

Lasts a long time
Oat fiber is good for adding crumble and fiber to baked goods, but it doesn't add much "structure" to food, most things I bake with high oat fiber will end poorly. Oat flour is better, I recommend only adding a bit of oat fiber. It doesn't add much for flavor, tastes kind of chalky which I actually like, in a weird way. But it's pure fiber, so I wouldn't expect it to taste good by itself.Good deal, it's oat fiber, and a nice product if you know what you're doing and got a good recipe using it. If you don't, baking with it can easily end badly, so I'm marking it 4 stars overall, because ease of use is lower.

I give it the benefit of the doubt
Not a fan of the smell, but ymmv. other than that I've used it and didnt experience anything unpleasant, I think if I can compare it to others and if they smell similar then I will have less reservations. 5 stars cause I gotta give the benefit of the doubt when my only objection could easily be a "me" thing

Warning.... questionable storage issue with Amazon Warehouse causing excessive rancidity.
FOLLOW UP: I complained directly to the company, and they did in fact refund my purchase, and they provided quick email responses, and a quick resolution for my complaint. It is listed with a No Return Policy on Amazon, however, the text of their listing does in fact guarantee 100% satisfaction. Nice surprise to see a company stand behind their guarantee. After talking with company representatives, I do believe that the product met their quality control guidelines when it was shipped to the Amazon Warehouse. I believe that it was not kept in a cool enough environment AFTER it arrived for storage with Amazon, and that is the point were the oils in the product turned rancid. --- I edited my original post to now say: The "Best By" date on my 5 lb package is was not for another 2 years (7/2022) - but it was extremely rancid when I opened it the same afternoon that it was delivered. I didn't bother to read all the negative reviews before I bought it, but sure read them tonight. Over a third of the reviews were negative.....and nearly all of those 50+ negative reviews said that the taste or smell was rancid.....just like mine. The company website states that their Oat Fiber has a "strong natural" smell that will go away when used in cooking..... What I got was not just strong and natural - the taste and smell was indeed RANCID taste. I'm a chef....and I know rancid when I smell and taste it. This storage issue with Amazon may also affect products from other companies as well. I did just buy a three pound bag through Amazon from Lifesource, and it was fine.... earthy as I expected, but no sense of rancidity.
