Wonderful original ideas for incorporating flavorful nutritional ingredients
Loved the original ways to incorporate products into vegan cooking to make them more nutritious and flavorful, including ways to make Asian and other international dishes with or without spicy flavors. Some of the flavor complexity comes from nutritious ingredients I hadn't thought to use before, such as teff grain, celery root, nutritional yeast, to name a few. I had checked out a copy of the book from my public library before I decided I wanted my own copy. These recipes do not duplicate the ones in other vegan recipe books I own. Many of the recipes are for a 4 quart slow cooker but could be tweaked for a larger one or made in an Instant Pot.

I watch Kathy on YouTube and have all of her books. I also have a few of her classes too. She puts everything in what she does. Can’t go wrong buying her books.

Take it with a grain of salt (or rice!) ~
Updated 2/25/2012 (at end):I've been vegan for awhile, so I don't really miss the meat options and don't regularly eat the vegan 'meat substitutes'. This book is rife with meat substitute dishes. But before you pass this by just hear me out.Slow cookers are traditionally used to create warm, filling, and hearty one plate (or bowl) dishes. Stews, chowders, soups, etc... So I feel this is why the author used a lot of the vegan meat substitutions in these recipes.Any dish in this recipe book can be modified easily. You can leave out the meat substitute or change it out for standard tofu, seitan, or other tempeh. Regardless, there are variations you can make while keeping the heart of the recipe intact.The recipes include some pretty out there dishes. There is a recipe for making bread in the slow cooker! There are a lot of various dishes and they all seem pretty easy and so far all have been tasty. Again, I would recommend some slight modifications or tweaking for your personal style.I wouldn't say that this is the end all vegan recipe book. That's why I give four stars. It's a nice addition to a vegan cookbook collection, but the following are the books I recommend (in order from my favorite): Veganomicon: The Ultimate Vegan Cookbook , Viva Vegan!: 200 Authentic and Fabulous Recipes for Latin Food Lovers , Becoming Vegan: The Complete Guide to Adopting a Healthy Plant-Based Diet , The Happy Herbivore Cookbook: Over 175 Delicious Fat-Free and Low-Fat Vegan Recipes .-------------------Update: I have made more of the recipes and have a couple of comments. Some recipes are obviously 'off'. The cheater chili for example: No indicator of water or vegetable stock to be added. If you rinse and drain the beans and corn, and dice the tomatoes (properly), then you will have virtually no liquid. I added a couple of cups of water and some tomato paste. And it was rather bland (called for just garlic, salt, and pepper) so I added some chili powder, cumin, Secret Ardvark habanero (secret weapon!), and some diced, chili powder crusted tofu. It went from ho hum to wowie! So just be aware that many of the recipes just require a tad bit of tweaking for your personal taste. It's not perfect, but it's a great guide to get you started, or to give you inspiration.

Save your money; just read your slow cooker manual
I have never written a bad review for a cookbook before, but every time I look over at this one, I feel so ripped off. I have over 140 vegan cookbooks and this has to be the very worst I have ever seen.Page 17, Dried beans from scratch: 1 pound beans, water, cook overnight. That's it! And that's not all: Page 18, Everyday rice: basmati rice, water, pinch of salt, cook. Page 25, Preserve-the-harvest diced tomatoes: "tomatoes to fill your crock," cook, freeze. Page 26, Beyond Easy Baked Potatoes: you guessed it; put potatoes in slow cooker and cook. Page 27, All-Occasion Roasted Garlic: Add 4 to 6 heads garlic and cook. Really? A whole slow cooker to cook 4 heads of garlic? Page 35, Brandied Cranberry Sauce: brandy, cranberries, sweetener, cook.Page 59, Creamy Potato Soup: potatoes, water, non-dairy milk, 1 clove garlic, and a little seasoning. Couldn't anyone come up with that on their own? Even the Cheater Chili another reviewer mentioned, is a joke: 3 cans beans, 1 can corn, 1 can tomatoes, and chili flavorings. Anyone could do that on top of the stove in less time than it would take to clean the slow cooker!Page 131, Sweet Herbed Beets: beets, water, herbs. Page 142, Southern-Style Green Beans: green beans, water, seasoning. Page 143 Vodka and Dill-Glazed Baby Carrots: carrots, water, vodka, seasoning. Page 189, Big Pot of Grits: grits, water, margarine. Page 190, Big Pot of Oatmeal: oats, water, non-dairy milk. Page 191, Pumpkin Pie Oatmeal: See previous recipe and add pumpkin puree and pumpkin pie spices. Also, two other recipes wasted on changing the flavor of oatmeal. Page 211 Earl Grey Poached Pears: pears, tea, sweetener. Page 216, Spiced cider: apple cider and spice, duh. Page 217, Cardamom Hot Chocolate: non-dairy milk, chocolate, cardamom, sugar.I don't consider these to be vegan recipes. They are foods everyone prepares, whether they are vegan or omnivore. These so called recipes have not been adapted for vegans . . . they never, ever, contained animal products!True, there are other more extensive recipes, but it is advertised as having 150 recipes. I think that is very misleading. And as other reviewers have mentioned, the more extensive recipes just say to add faux meat.I only paid $11.00 for the book and got free shipping so it's not worth the trouble to send it back, but if I had looked through the book before purchasing it, it would not be a part of my collection. Any other slower cooker book would serve better; just substitute faux meat, non-dairy milk, and margarine when the original ingredients are specified.

Great slowcooker book that let's you adapt recipes
Great recipes. I am not vegan, I do eat meat. I love this book as the recipes do not require me to be around.... it is dump and go. I have tried vegan and non- vegan versions that I made up based on the recipes and I must say I love the usage of beans and legumes. It us a great slow cooker book and not just for vegans.

I refer to this book almost every week - really helpful!
Great cookbook - I love the "night before" preparation instructions. Some of the recipes are a little bland but easily modified to suit your own tastes. Some recipes also could do with tips on accompaniments (rice? pasta? etc) but it's easy to choose your own. I've not made a recipe from this that I haven't liked.

Strange recipes
This book looks very pretty, but I can't get my head round to the recipes. Shreeded jackfruit for tacos, Philadelphia style cheesy portobello sandwich.. not really making the best of the slow cooker. Why make bread in the slow cooker? And why use (fake) chicken flavoured anything in a vegan cookbook? In every recipe?! Very disappointed, should have sent this back.

vegan cook book
another waste of money , most recipes need far to many what will be hardly used ingredient unless im gonna cook same thing constantly , have done couple of recipes which were nice but could have just looked on line for them

An ancient way of cooking for an healthy life
The possibility to find meals ready when you walk in your home door is priceless, such as to have healthy and delicious things to eat: this book can provide it. Photos are beautiful, I recommend it, you won't be disappointed :)
